Abstract. The effect of moisture of the substrate from rye straw on yielding of two oyster mushroom strains was investigated. The substrates of moisture of 60, 65, 70, 75 and 80% were used. It was found that the optimum substrate moisture was 75%.

of two oyster mushroom strains
Summary
The purpose of the studies was to determine the influence of moisture of the substrate from rye straw on Pleurotus yielding. The experiment was conducted in a farm in Łobez near Jarocin. Two oyster mushroom strains were used in the experiment, i.e. ‘HK-35’ and ‘K-22’. The substrate was pasteurised at the temperature of 95°C for 5 hours and then tap water was added to the moisture of 60, 65, 70, 75 and 80%. The total and marketable yields were determined as well as the amount of mis-shaped carpophores.
It was found that the optimum moisture of substrate was 75%, when the total and marketable yields were the biggest. The moisture content of 80% influenced negatively the yielding because of the high share of mis-shaped carpophores.
